Ingredients

  • 1 baguette or ciabatta loaf
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 medium ripe tomatoes, diced
  • Salt and freshly ground black pepper, to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat your oven to 200°C (180°C fan) / 400°F.
  2. Slice the bread into 1-inch thick pieces and place them on a baking tray.
  3. In a small bowl, mix the minced garlic with olive oil. Brush this mixture over each slice of bread.
  4. Top each slice with diced tomatoes. Season with salt and pepper.
  5. Bake for 10-15 minutes, or until the bread is golden and crispy.
  6. Garnish with fresh basil leaves before serving.
